~Milk Chocolate


Milk chocolate is a solid chocolate confectionery which contains cocoa, milk and sugar. It is a melt in the mouth treat. Milk chocolate is smooth in texture and is loved the world over. Milk chocolate contains milk solids and sugar and cocoa solids, it contains less than 35% of cocoa solids and that's why it's called as milk chocolate.
Milk Chocolate has a flavor that can be described as sweet and chocolaty. It is used in many desserts, pastries and confections.

~Dark Chocolate


Dark chocolate is a form of chocolate which contains cocoa solids and cocoa butter without the butter and milk which is found in milk chocolate. When sugar is added to chocolate liquor we get dark chocolate, this form chocolate contain more than 35% of cocoa solids. Dark chocolate has many health benefits such as it is a powerful source of antioxidants, it lowers the blood pressure, it may reduce heart disease and it is loaded with nutrients that can positively affect our heath. 
It is very rich in minerals such as iron, zinc and magnesium.

~White Chocolate



White chocolate is a product which is a chocolate confection and pale ivory in color, and made from milk solids, cocoa butter, sugar and sometimes vanilla. The White Chocolate does not contain cocoa solids which is the main ingredient in the other types of chocolate such as dark chocolate and milk chocolate. The lack of cocoa solids gives it the white coloring.
This chocolate is made up with a blend of sugar, milk products, cocoa butter and sometimes vanilla and a fatty substance which is called lecithin.

~Ruby Chocolate



Ruby Chocolate is a form of chocolate which is introduced in 2017 by Barry Callebaut, a Belgian-swiss cocoa company. This chocolate contains cocoa butter, milk, sugar, cocoa mass and citric acid. This chocolate has a taste that has been described as slightly sweet and sour.
This chocolate is made from "Ruby cocoa beans". It can be used as the same way that white, milk or dark chocolate is used and it should be tempered between 28.5-29.5°C.

~Compound Chocolate



Compound chocolate is a product made from a combination of cocoa, vegetable fat and sweeteners. It is a chocolate substitute. In compound chocolate cocoa butter is eliminated completely and replaced with hydrogenated vegetable oil. This affects the texture of the chocolate and it does not melt in the mouth as it should.
Compound chocolate is used as a lower cost alternative, as it uses hard vegetable fats which are less expensive such as coconut oil or palm kernel oil in the place of cocoa butter. This chocolate is used for coating the candies, cashews, etc.
 

~Semi-Sweet Chocolate



Semi-sweet chocolate is a form of chocolate which is technically a form of dark chocolate. The range of 'sweetness' in semi-sweet chocolate varies greatly from bar to bar. However, the name usually refers to chocolate that contains no more than 50% of sugar.

~Bitter-Sweet Chocolate


Bitter-sweet chocolate is also a form of chocolate which contains less sugar than semi-sweet and this chocolate is called for recipes that are looking for deep and intense chocolate flavor. The bitter-sweet chocolate contains 70%  of cocoa and has less sugar.

~Couverture Chocolate



Couverture chocolate refers to highest quality of chocolate which is made from basic chocolate ingredients such as cocoa solids, sugar, cocoa butter and additives like soy lecithin, milk powder and vanilla. Couverture chocolate has the finest texture and that's because of the addition of cocoa butter in the highest amount.
