ALL ABOUT CHOCOLATES
Chocolates are sweet and it is one of the most craved foods in the world. It just melt in our mouth and tastes so good that many of us are ready to eat them at any given time. Now, one of the reason why we love chocolates is because it contain a substance called anandamide. In sanskrit , 'Ananda' means 'bliss'.
Now, when we eat chocolate anandamide present in them binds to special receptors in the brain gives us pleasure and joy.
Chocolates are obtain from cocoa beans, and these cocoa beans have an intense bitter taste, which is mostly why they are processed to make chocolates sweeter. To make chocolate these cocoa beans are fermented, roasted and ground together to form cocoa nibs. These cocoa nibs further ground to form a paste which is called chocolate liquor. To make chocolate milk solids and sugar are added to cocoa liquor in varying proportions to get different kinds of chocolates.
TYPES OF CHOCOLATES:
There are three main types of chocolate-milk chocolate, white chocolate and dark chocolate. Everyone has their own favorite type/ flavor of chocolate. But, how much do you actually know about the different kinds of chocolates and what ingredients are used to make it.
CHOCOLATE LIQUOR
Chocolate liquor is the base of all types of chocolates. This thick, dark brown paste is created from cocoa nibs and these nibs are finely ground to a smooth texture. Chocolate liquor is 100% cocoa, with no added ingredients. Under high pressure, this paste separates into cocoa butter and cocoa powder (also known as cocoa solids).
To make chocolate milk solids and sugar are added to cocoa liquor in varying proportions to get the three types of chocolates i.e. milk, dark, and white chocolate.
MILK CHOCOLATE
Milk chocolate is an indulgent, melt in the mouth treat. Creamy and smooth in texture, milk chocolate is loved the world over. Firstly, chocolate producers blend milk ingredients and sugar and gently mix them with chocolate liquor and cocoa powder. This mixture is dried and becomes a milk chocolate crumbly powder.
Milk chocolate contain milk solids, sugar and cocoa solids, it contains less than 35% of cocoa solids and that's why it's called as milk chocolate.
DARK CHOCOLATE
Dark chocolate is a form of chocolate containing cocoa solids and cocoa butter. The cocoa in dark chocolate also contain antioxidants called flavonoids which may provide several health benefits such as very nutritious, powerful source of antioxidants, may improve blood flow and lower blood pressure and so on..Dark chocolate contains more than 35% of cocoa solids and this is bitter sweet chocolate.
WHITE CHOCOLATE
White chocolate is a chocolate confection, pale ivory in color, made from cocoa butter, sugar, milk solids and sometimes vanilla. White chocolate does not contain cocoa solids, which is found in other types of chocolate, such as milk chocolate and dark chocolate.
COMPOUND CHOCOLATE
In compound chocolate cocoa butter is completely replaced with hydrogenated vegetable oil. This affects the texture of the chocolate and it doesn't melt in your mouth as it should.Cocoa butter melts between 34° to 38° celsius which is perfect as soon as you put it starts melting. But
this thing doesn't happen in compound chocolate because the melting point is much higher.
Due to the addition of vegetable oil, it is easy to work with.
